Description

This creamy roasted garlic cheddar cauliflower soup combines the nutty flavor of roasted garlic with sharp cheddar and tender cauliflower for a comforting, savory soup. Perfect for a cozy night, this soup is rich, flavorful, and packed with veggies!


Ingredients

  • 1 large head of cauliflower, chopped
  • 1 head garlic
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cups vegetable broth
  • 1 cup shredded sharp cheddar cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  • Preheat your oven to 400°F (200°C). Drizzle the cauliflower and garlic head with olive oil and roast for 30 minutes.
  • In a pot, sauté the diced onion until soft and translucent.
  • Add the roasted cauliflower, squeezed garlic cloves, and vegetable broth. Simmer for 10 minutes.
  • Blend the mixture until smooth. Stir in the shredded cheddar cheese and season with salt and pepper.
  • Garnish with fresh parsley if desired and serve warm.
