  • 1 head garlic
  • 1 tsp olive oil
  • 2 lbs red potatoes, washed and quartered

Instructions

  • Roast the Garlic
    Preheat your oven to 375°F. Cut the top 1/4 inch off the garlic head. Place the garlic on a piece of foil and drizzle with olive oil. Wrap the foil around the garlic to enclose it and roast for about 1 hour, or until soft and golden. Once roasted, squeeze the softened garlic cloves out of their skins when ready to use.
  • Prepare the Potatoes
    Place quartered red potatoes in a large pot or Dutch oven. Cover with cold water and add 1 tsp salt. Bring to a boil, then simmer for 15 minutes or until the potatoes are fork-tender.
  • Drain and Return to Pot
