Description

This creamy Roasted Garlic Soup is rich in flavor and perfect for cozy meals. With deep, savory notes from roasted garlic and a hint of thyme, it’s an ideal starter or main dish, especially when paired with crusty bread.

  • 3 large heads of garlic
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 tablespoons butter
  • 4 cups vegetable or chicken broth
  • 1/2 cup heavy cream or coconut milk
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • 1/4 teaspoon ground nutmeg (optional)
  • Salt and pepper to taste
  • Optional toppings: croutons, fresh parsley, Parmesan cheese

Instructions

  • Roast the Garlic: Preheat your oven to 400°F (200°C). Slice off the top of each garlic head to expose the cloves, drizzle with olive oil, and wrap them in foil. Roast in the oven for 30-40 minutes, or until the garlic is soft and caramelized. Let the garlic cool, then squeeze the roasted cloves out of their skins.
  • Sauté the Onion: In a large pot, melt the butter over medium heat. Add the chopped onion and sauté for about 5 minutes, or until softened.
  • Add Roasted Garlic: Add the roasted garlic cloves to the pot, breaking them up with a spoon. Stir in the thyme, a pinch of salt, and ground nutmeg (if using).
  • Add Broth and Simmer: Pour in the vegetable or chicken broth and bring the soup to a boil. Reduce the heat to low, cover, and let it simmer for 15-20 minutes to allow the flavors to meld.
  • Blend the Soup: Use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer the soup in batches to a blender and blend until creamy. Return the blended soup to the pot.
  • Add Cream: Stir in the heavy cream or coconut milk, and adjust the seasoning with salt and pepper to taste. Warm the soup over low heat for another 5 minutes.
  • Serve: Ladle the soup into bowls and garnish with croutons, fresh parsley, or a sprinkle of Parmesan cheese for extra flavor.
