- 3 large heads of garlic
- 2 tablespoons olive oil
- 1 onion, finely chopped

Instructions
- Roast the Garlic: Preheat your oven to 400°F (200°C). Slice off the top of each garlic head to expose the cloves, drizzle with olive oil, and wrap them in foil. Roast in the oven for 30-40 minutes, or until the garlic is soft and caramelized. Let the garlic cool, then squeeze the roasted cloves out of their skins.
- Sauté the Onion: In a large pot, melt the butter over medium heat. Add the chopped onion and sauté for about 5 minutes, or until softened.
- Add Roasted Garlic: Add the roasted garlic cloves to the pot, breaking them up with a spoon. Stir in the thyme, a pinch of salt, and ground nutmeg (if using).
- Add Broth and Simmer: Pour in the vegetable or chicken broth and bring the soup to a boil. Reduce the heat to low, cover, and let it simmer for 15-20 minutes to allow the flavors to meld.
- Blend the Soup: Use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer the soup in batches to a blender and blend until creamy. Return the blended soup to the pot.
- Add Cream: Stir in the heavy cream or coconut milk, and adjust the seasoning with salt and pepper to taste. Warm the soup over low heat for another 5 minutes.
- Serve: Ladle the soup into bowls and garnish with croutons, fresh parsley, or a sprinkle of Parmesan cheese for extra flavor.
