Description

These Roasted Parmesan Creamed Onions are a rich, savory side dish that combines the sweetness of caramelized onions with the creaminess of a Parmesan sauce. Perfect for any occasion, from holiday dinners to weeknight meals.

Ingredients

Scale

For the Onions:

  • 4 large yellow or sweet onions, peeled and sliced into ½-inch thick rings
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

For the Parmesan Cream Sauce:

  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme (fresh or dried)
  • 2 tablespoons unsalted butter

For Garnish:

  • Fresh parsley, chopped (optional)

Instructions

  • Preheat Oven:
Preheat your oven to 375°F (190°C). Grease a large baking dish with olive oil or butter.
  • Prepare the Onions:
Toss the onion rings with olive oil, salt, and pepper. Spread them out evenly in the prepared baking dish.
  • Roast the Onions:
Roast the onions in the preheated oven for about 25-30 minutes, or until they start to soften and caramelize around the edges.
  • Make the Parmesan Cream Sauce:
While the onions are roasting, heat a saucepan over medium heat. Add the butter and let it melt. Stir in the heavy cream, garlic powder, and thyme. Simmer for 2-3 minutes until the mixture thickens slightly. Gradually stir in the Parmesan cheese, allowing it to melt and combine with the cream. Continue stirring until the sauce is smooth and creamy. Season with salt and pepper to taste.
  • Combine and Bake:
Once the onions are roasted, pour the Parmesan cream sauce over the onions, making sure they are well-coated. Return the dish to the oven and bake for an additional 10-15 minutes, or until the cream is bubbly and the top is golden brown.
  • Serve:
Remove the dish from the oven, garnish with fresh parsley (if desired), and serve warm.

Notes

  • If you prefer a stronger garlic flavor, you can add an extra ½ teaspoon of garlic powder to the Parmesan cream sauce.
  • For a deeper flavor, consider adding a touch of balsamic vinegar to the onions before roasting.
  • This dish can be made in advance and reheated in the oven before serving.
