Ingredients

Scale

For the Roasted Potatoes:

  • 2 pounds potatoes, cleaned and cut into wedges
  • 1 tablespoon oil (olive or vegetable)
  • Salt and pepper, to taste

For the Goat Cheese Dressing:

  • 4 tablespoons goat cheese (chevre), crumbled, at room temperature
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice (or apple cider vinegar)
  • 1 clove garlic, minced or grated
  • 1 teaspoon Dijon mustard
  • 1 teaspoon grainy mustard
  • Salt and pepper, to taste

Instructions

  • Preheat Oven: Preheat your oven to 400°F (200°C).
  • Prepare Potatoes: In a large bowl, toss the potato wedges with oil, salt, and pepper until evenly coated.
  • Bake: Spread the potatoes in a single layer on a baking sheet. Roast for 35 minutes, flipping halfway through, until golden brown and crispy.
  • Mix Dressing: In a separate bowl, combine goat cheese, olive oil, lemon juice, garlic, Dijon mustard, and grainy mustard. Mix until smooth, seasoning with salt and pepper to taste.
  • Combine: Toss the warm roasted potatoes with the dressing, allowing the goat cheese to melt slightly over the potatoes.
  • Serve: Enjoy warm!

Notes

  • For an extra flavor boost, consider adding fresh herbs like rosemary or thyme to the potatoes before roasting.
  • Any leftover dressing can be used as a salad dressing or a dip.
