- 4 boneless, skinless chicken breasts
- 1 cup roasted red peppers (sliced)
- 1 cup fresh spinach
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Carefully slice each chicken breast along the side to create a pocket, ensuring not to cut all the way through.
- Evenly distribute the roasted red peppers, spinach, and mozzarella cheese among the chicken breasts. Secure the openings with toothpicks if necessary.
- In a small bowl, mix the olive oil, garlic powder, Italian seasoning, salt, and pepper. Brush this mixture over both sides of the stuffed chicken breasts.
- Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is fully cooked (internal temperature of 165°F) and no longer pink inside.
Notes
- For extra flavor, sprinkle additional mozzarella on top during the last 5 minutes of baking.
