Description

A delightful and colorful dish featuring tender chicken breasts stuffed with roasted red peppers, fresh spinach, and gooey mozzarella cheese, perfect for family dinners or special occasions.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup roasted red peppers (sliced)
  • 1 cup fresh spinach
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 375°F (190°C).
  • Carefully slice each chicken breast along the side to create a pocket, ensuring not to cut all the way through.
  • Evenly distribute the roasted red peppers, spinach, and mozzarella cheese among the chicken breasts. Secure the openings with toothpicks if necessary.
  • In a small bowl, mix the olive oil, garlic powder, Italian seasoning, salt, and pepper. Brush this mixture over both sides of the stuffed chicken breasts.
  • Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is fully cooked (internal temperature of 165°F) and no longer pink inside.

Notes

  • For extra flavor, sprinkle additional mozzarella on top during the last 5 minutes of baking.
