Description

Ingredients

  • 4 boneless, skinless chicken breasts, pounded to 1/2 inch thickness
  • 1 red bell pepper, roasted and diced
  • 1 cup fresh spinach, chopped
  • 1/2 cup grated mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 1 egg, beaten
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • Make filling: In a bowl, combine roasted red pepper, spinach, mozzarella cheese, Parmesan cheese, breadcrumbs, egg, salt, and pepper.
  • Stuff chicken: Make a slit in each chicken breast. Stuff with the filling and secure with toothpicks.
  • Roast: Place stuffed chicken breasts on a baking sheet lined with parchment paper. Roast in a preheated 400°F (200°C) oven for 25-30 minutes, or until cooked through.
