- 2 tbsp honey
- 1/2 lemon, juiced
- 4 sprigs fresh thyme, plus extra for garnish
- 2 slices rustic bread (1-inch thick)
- 1 tbsp olive oil
- 3/4 cup whole milk ricotta cheese
- Pinch of sea salt
Instructions
- Preheat Oven: Preheat to 400°F (200°C).
- Roast Strawberries:
- Place strawberries in a baking dish and drizzle with honey. Add lemon juice and thyme sprigs on top.
- Roast in the oven for 20 minutes, stirring halfway through. Set aside to cool slightly.
- Toast the Bread:

- Whip the Ricotta:
- In a food processor, pulse the ricotta for 30 seconds to 1 minute until it becomes light and fluffy.
- Assemble the Toast:
- Spread whipped ricotta evenly on each slice of toasted bread.
- Spoon roasted strawberries over the ricotta layer.
- Sprinkle with fresh thyme leaves and a pinch of sea salt.
