- 4 bone-in, skin-on chicken thighs (or drumsticks)
- 2 tablespoons za’atar spice blend
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 2 garlic cloves, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Optional: lemon slices and fresh parsley for garnish
Instructions
- Preheat oven to 425°F (220°C).
- In a small bowl, whisk together olive oil, lemon juice, garlic, za’atar, salt, and pepper.
- Pat chicken dry with paper towels. Place in a baking dish or on a sheet pan lined with parchment.
- Rub spice mixture all over the chicken, getting under the skin when possible for deeper flavor.
- Roast for 35–45 minutes, or until the skin is crispy and the internal temperature reaches 165°F (74°C).
- Rest for 5 minutes. Garnish with lemon slices and chopped parsley before serving, if desired.
