Description

Roasted Za’atar Chicken is a savory, herbaceous dish featuring crispy, juicy chicken coated in olive oil, garlic, lemon, and fragrant za’atar spice blend — perfect for weeknight dinners or special occasions.


Ingredients

  • 4 bone-in, skin-on chicken thighs (or drumsticks)
  • 2 tablespoons za’atar spice blend
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 garlic cloves, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional: lemon slices and fresh parsley for garnish

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a small bowl, whisk together olive oil, lemon juice, garlic, za’atar, salt, and pepper.
  3. Pat chicken dry with paper towels. Place in a baking dish or on a sheet pan lined with parchment.
  4. Rub spice mixture all over the chicken, getting under the skin when possible for deeper flavor.
  5. Roast for 35–45 minutes, or until the skin is crispy and the internal temperature reaches 165°F (74°C).
  6. Rest for 5 minutes. Garnish with lemon slices and chopped parsley before serving, if desired.
