Description

Simple and flavorful roasted zucchini seasoned with garlic and herbs, perfect as a healthy side dish.


Ingredients

  • 4 medium zucchinis, sliced into 1/4-inch thick rounds
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon freshly grated Parmesan cheese (optional)


Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a large bowl, toss zucchini slices with olive oil, minced garlic, oregano, salt, and pepper until evenly coated.
  3. Arrange zucchini in a single layer on a baking sheet lined with parchment paper.
  4. Roast for 15-20 minutes, turning halfway through, until zucchini is tender and lightly browned.
  5. Remove from oven and, if using, sprinkle with Parmesan cheese before serving.

Notes

  • You can add red pepper flakes for a spicy kick.
  • For a vegan option, omit Parmesan or use a vegan cheese alternative.
