- 4 medium zucchinis, sliced into 1/4-inch thick rounds
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and freshly ground black pepper, to taste
- 1 tablespoon freshly grated Parmesan cheese (optional)
Instructions
- Preheat oven to 425°F (220°C).
- In a large bowl, toss zucchini slices with olive oil, minced garlic, oregano, salt, and pepper until evenly coated.
- Arrange zucchini in a single layer on a baking sheet lined with parchment paper.
- Roast for 15-20 minutes, turning halfway through, until zucchini is tender and lightly browned.
- Remove from oven and, if using, sprinkle with Parmesan cheese before serving.
Notes
- You can add red pepper flakes for a spicy kick.
- For a vegan option, omit Parmesan or use a vegan cheese alternative.
- Great served warm or at room temperature.
