This creamy and tangy Pimiento Cheese recipe, shared by Rosalynn Carter, is a Southern classic that’s perfect for spreading on crackers, sandwiches, or even using as a dip. With its sharp cheddar cheese, creamy mayonnaise, and sweet pimientos, it’s an irresistible treat that has been passed down through generations.
Ingredients
Scale
- 8 oz sharp cheddar cheese, grated
- 8 oz mild cheddar cheese, grated
- 1 jar (4 oz) pimentos, drained and chopped
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper, to taste
- 1 tablespoon finely chopped green onions (optional, for added flavor)
Instructions
- In a large mixing bowl, combine both the grated sharp cheddar cheese and mild cheddar cheese.
- Add the chopped pimentos, mayonnaise, Dijon mustard, and lemon juice to the cheese mixture.
- Stir in the garlic powder, onion powder, salt, and pepper. Mix until all ingredients are fully combined and the cheese spread has a smooth consistency.
- If desired, fold in finely chopped green onions for an added burst of flavor.
- Taste and adjust seasoning as needed, adding more salt, pepper, or lemon juice according to your preference.
- Refrigerate the pimiento cheese for at least an hour to let the flavors meld together.
- Serve with crackers, on a sandwich, or as a dip with fresh veggies.
Notes
- For an extra creamy version, you can use half sour cream and half mayonnaise instead of all mayonnaise.
- You can also add a bit of hot sauce or cayenne pepper for a spicy kick.
- This pimiento cheese can be stored in an airtight container in the refrigerator for up to a week.
