Description

This creamy and tangy Pimiento Cheese recipe, shared by Rosalynn Carter, is a Southern classic that’s perfect for spreading on crackers, sandwiches, or even using as a dip. With its sharp cheddar cheese, creamy mayonnaise, and sweet pimientos, it’s an irresistible treat that has been passed down through generations.

Ingredients

Scale
  • 8 oz sharp cheddar cheese, grated
  • 8 oz mild cheddar cheese, grated
  • 1 jar (4 oz) pimentos, drained and chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 tablespoon finely chopped green onions (optional, for added flavor)

Instructions

  1. In a large mixing bowl, combine both the grated sharp cheddar cheese and mild cheddar cheese.
  2. Add the chopped pimentos, mayonnaise, Dijon mustard, and lemon juice to the cheese mixture.
  3. Stir in the garlic powder, onion powder, salt, and pepper. Mix until all ingredients are fully combined and the cheese spread has a smooth consistency.
  4. If desired, fold in finely chopped green onions for an added burst of flavor.
  5. Taste and adjust seasoning as needed, adding more salt, pepper, or lemon juice according to your preference.
  6. Refrigerate the pimiento cheese for at least an hour to let the flavors meld together.
  7. Serve with crackers, on a sandwich, or as a dip with fresh veggies.

Notes

  • For an extra creamy version, you can use half sour cream and half mayonnaise instead of all mayonnaise.
  • You can also add a bit of hot sauce or cayenne pepper for a spicy kick.
  • This pimiento cheese can be stored in an airtight container in the refrigerator for up to a week.
