- 1 lb spicy breakfast sausage
- 1 can (10 oz) Rotel diced tomatoes with green chilies, drained
- 8 oz cream cheese, softened
- 1 can (16 oz) refrigerated biscuit dough (8-count)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon smoked paprika (optional)
- 1 tablespoon chopped parsley (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a muffin tin.
- In a skillet over medium heat, cook sausage until fully browned, breaking it apart. Drain excess grease.
- Add drained Rotel and cream cheese to the sausage. Stir until cream cheese is melted and the mixture is fully combined. Season with garlic powder, onion powder, and paprika. Let cool slightly.
- Separate biscuit dough and cut each biscuit in half to make 16 pieces. Flatten each piece into a 3-inch circle.
- Spoon about 1 tablespoon of sausage mixture into the center of each dough circle. Fold the edges up and pinch to seal tightly into a ball.
- Place seam-side down on the baking sheet or into greased muffin cups.
- Bake for 12–15 minutes, or until golden brown and puffed.
- Remove and cool slightly. Garnish with chopped parsley and serve warm.

- Use hot or mild sausage depending on your spice preference.
- Reheat leftovers in an oven or air fryer to maintain crispness.
- Add shredded cheddar or pepper jack cheese for extra cheesiness.
