Description
A hearty, rustic version of the classic Beef Stroganoff, featuring tender beef, a creamy mushroom sauce, and served over soft egg noodles. This comforting dish is perfect for a family meal or a special dinner.

- 1 lb (450g) beef sirloin or stew meat, cut into thin strips
- 2 tablespoons olive oil
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 8 oz (225g) mushrooms, sliced
- 1 cup (240ml) beef broth
- 1 tablespoon Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1 teaspoon paprika
- 1/2 cup (120ml) heavy cream
- 2 tablespoons all-purpose flour
- Salt and black pepper to taste
- 12 oz (340g) egg noodles
- Fresh parsley, chopped (for garnish)
Instructions
- Cook egg noodles according to package instructions, drain, and set aside.
- In a large skillet or sauté pan, heat olive oil over medium-high heat. Add beef strips and cook until browned, about 5–7 minutes. Remove beef from the skillet and set aside.
- In the same skillet, add sliced onion and garlic. Sauté until softened, about 3–4 minutes.
- Add mushrooms and cook until they release their moisture and become golden brown, about 5 minutes.
- Stir in flour and cook for 1–2 minutes, allowing it to absorb the juices.
- Slowly add beef broth while stirring to avoid lumps. Add Worcestershire sauce, Dijon mustard, and paprika. Bring to a simmer and cook for 3–4 minutes, until the sauce thickens slightly.
- Reduce heat and stir in heavy cream. Add salt and pepper to taste. Return the cooked beef to the pan and stir to combine with the sauce.
- Serve the beef stroganoff over the cooked egg noodles. Garnish with chopped fresh parsley before serving.
Notes
- For a richer flavor, you can use sour cream in place of some of the heavy cream.
- If you prefer a lighter version, substitute the heavy cream with half-and-half or milk.
- Serve with a side of steamed vegetables or a green salad for a complete meal.
- Leftovers can be stored in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave.
