Description

These crispy, flavorful mini Hasselback potatoes pair perfectly with a spicy, creamy Cajun dip. A simple yet impressive dish ideal for snacking, appetizers, or a fun side!

For the Potatoes:

  • 1 1/2 lbs small yellow flesh potatoes
  • 1/4 cup vegan butter, melted
  • Pinch of salt
  • 1/4 tsp pepper
  • 1 tsp dried parsley

For the Cajun Spice Mix:

  • 3 tsp smoked paprika
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp pepper
  • 1 tsp onion powder
  • 1 tsp oregano
  • 1 tsp cayenne pepper
  • 1/2 tsp thyme

For the Cajun Dip:

  • 1/2 cup vegan mayo
  • 1 tbsp Cajun spice mix (save the leftover spice mix for future use!)

Instructions

  • Preheat and Prepare:
    • Preheat your oven to 425°F (220°C). Line a baking dish with parchment paper.
  • Slice the Potatoes:
    • Carefully slice each potato thinly, making cuts halfway down without slicing through. Use a very sharp knife for precision and keep the potato intact.
  • Bake the Potatoes (Round 1):
    • Place the potatoes sliced side down in the baking dish. Brush with melted butter and sprinkle with a pinch of salt and pepper.
    • Bake for 20 minutes.
  • Bake the Potatoes (Round 2):
    • Remove the baking dish from the oven and flip the potatoes sliced side up. Brush with more melted butter and sprinkle with additional salt, pepper, and parsley.
    • Return to the oven and bake for 30 minutes, or until the potatoes are fork-tender and crispy on top. Broil for 2-3 minutes for extra crispiness if desired.
  • Make the Cajun Dip:
    • While the potatoes bake, combine the vegan mayo and 1 tablespoon of the Cajun spice mix in a bowl. Stir until well combined.
  • Serve:
    • Remove the potatoes from the oven and let them cool slightly. Serve warm

Notes

  • For extra crispiness, broil the potatoes for 2-3 minutes at the end of baking.
  • Leftover Cajun spice mix can be stored in an airtight container for future use.
