Description
These Salted Sage Honey Butter Brioche Rolls are soft, buttery, and perfectly sweetened with honey. Finished with flaky sea salt and sage-infused honey butter, they’re a show-stopping addition to any dinner table. Perfect for holidays, family gatherings, or any special meal!

For the Dough:
- 3 1/2–4 cups all-purpose flour
- 1 packet (2 1/4 tsp) instant yeast
- 1 tsp salt
- 3/4 cup warm milk
- 3 tbsp honey
- 6 tbsp salted butter, at room temperature
- 3 whole eggs, at room temperature
- 1 egg yolk, beaten with 1 tbsp water
- Flaky sea salt, for topping
For the Sage Honey Butter:
- 12 sage leaves
- 6 tbsp salted butter, at room temperature
- 3 tbsp honey
Instructions
- Prepare the Dough:
In the bowl of a stand mixer, combine the flour, yeast, and salt. Add the warm milk, honey, eggs, and butter. Using the dough hook, mix for 4–5 minutes until the flour is fully incorporated. If the dough is sticky, add flour 1/4 cup at a time.
Cover the bowl with plastic wrap and let sit at room temperature for 15 minutes, or up to 1 hour. - Make the Sage Honey Butter:
In a skillet over medium heat, fry the sage leaves with 1 tbsp butter until crispy. Remove and chop the leaves.
In a small bowl, mix the remaining butter, honey, chopped sage, and a pinch of sea salt. - Prepare the Rolls:
Preheat the oven to 350°F (175°C). Line a 9×9-inch baking dish with parchment paper.
Punch down the dough and divide it in half. On a lightly floured surface, roll each half into a 12-inch square, about 1/4 inch thick.
Brush the squares with the sage honey butter, saving some for later. Cut each square into 6 strips. Roll each strip into a coil and place seam-side down in the prepared baking dish. - Let the Rolls Rise:
Brush the rolls with the beaten egg yolk.
Cover the dish and let the rolls rise for 30 minutes until puffy. - Bake and Finish:
Bake for 22–25 minutes until golden brown.
Remove from the oven and brush with the remaining sage honey butter.
Notes
- Flour Adjustment: Depending on the humidity and your flour, you may need to adjust the amount of flour slightly. Add in small increments until the dough is soft but not sticky.
- Storage: These rolls are best enjoyed fresh but can be stored in an airtight container for up to 2 days. Reheat in the oven for a few minutes before serving.
- Make Ahead: You can prepare the dough the night before, let it rise, then refrigerate overnight and proceed with rolling and baking the next day.
