  • 6 cups Rice Krispies cereal
  • 3 tablespoons unsalted butter
  • 1 package (10 oz) marshmallows
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups sweetened shredded coconut
  • 1/2 cup caramel sauce
  • 1/2 cup chocolate chips
  • 1 tablespoon coconut oil (for the chocolate drizzle)

Instructions

  1. In a large pan, melt the butter over low heat. Add the marshmallows and stir until melted and smooth.
  2. Remove from heat and stir in the vanilla extract.
  3. Slowly add the Rice Krispies cereal to the marshmallow mixture, stirring until completely coated.
  4. Spread the mixture into a greased 9×13-inch baking dish, pressing it down gently to form an even layer.
  5. Toast the shredded coconut in a dry skillet over medium heat for about 3–4 minutes until golden brown. Be sure to stir often to avoid burning.
  6. Once toasted, spread the coconut evenly over the Rice Krispies layer.
  7. Drizzle the caramel sauce over the coconut layer, then let the bars set at room temperature for about 15 minutes.
  8. In a small microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second intervals, stirring in between, until smooth.
  9. Drizzle the melted chocolate over the caramel-coconut layer and let it set before cutting into squares.

Notes

  • If you like your treats extra gooey, you can add more marshmallows to the Rice Krispies mixture.
  • For a richer flavor, try using dark chocolate for the drizzle.
  • Store the bars in an airtight container at room temperature for up to 3 days.
