Instructions
- Cook the Sausage:
- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sausage and cook, breaking it into bite-sized pieces with a spoon, until browned and cooked through (about 5-7 minutes). Remove the sausage from the pot and set aside.
- Sauté the Vegetables:
- In the same pot, add the chopped onion and cook for 2-3 minutes until softened. Add the garlic and cook for an additional 1 minute, until fragrant.
- Add the Broth and Vegetables:
- Pour in the chicken broth and bring it to a simmer. Add the chopped cabbage, diced potatoes, and sliced carrots. Stir to combine.
- Season the Stew:
- Add the dried thyme, paprika, salt, and pepper to the pot. Stir everything together, cover, and let it simmer for about 25-30 minutes, or until the vegetables are tender.
- Add the Sausage Back:
- Once the vegetables are tender, return the cooked sausage to the pot. Stir well and let the stew simmer for an additional 5 minutes to allow the flavors to meld.
- Serve:
