Description

This hearty Sausage and Cabbage Stew is a comforting, one-pot dish that combines savory sausage, tender cabbage, and a rich, flavorful broth. Perfect for a cozy meal on chilly days, this stew is easy to prepare and full of satisfying flavors!

Ingredients

Scale
  • For the Stew:
    • 1 lb (450g) sausage (Italian sausage or smoked sausage works well)
    • 1 medium onion, chopped
    • 2 cloves garlic, minced
    • 4 cups low-sodium chicken broth (or vegetable broth)
    • 1 medium head of cabbage, chopped into bite-sized pieces
    • 2 medium potatoes, peeled and diced
    • 2 large carrots, peeled and sliced
    • 1 teaspoon dried thyme
    • ½ teaspoon paprika
    • Salt and pepper to taste
    • 2 tablespoons olive oil
  • For Garnish (Optional):
    • Fresh parsley, chopped
    • Crusty bread (for serving)

Instructions

  1. Cook the Sausage:
    • In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sausage and cook, breaking it into bite-sized pieces with a spoon, until browned and cooked through (about 5-7 minutes). Remove the sausage from the pot and set aside.
  2. Sauté the Vegetables:
    • In the same pot, add the chopped onion and cook for 2-3 minutes until softened. Add the garlic and cook for an additional 1 minute, until fragrant.
  3. Add the Broth and Vegetables:
    • Pour in the chicken broth and bring it to a simmer. Add the chopped cabbage, diced potatoes, and sliced carrots. Stir to combine.
  4. Season the Stew:
    • Add the dried thyme, paprika, salt, and pepper to the pot. Stir everything together, cover, and let it simmer for about 25-30 minutes, or until the vegetables are tender.
  5. Add the Sausage Back:
    • Once the vegetables are tender, return the cooked sausage to the pot. Stir well and let the stew simmer for an additional 5 minutes to allow the flavors to meld.
  6. Serve:
    • Ladle the stew into bowls and garnish with freshly chopped parsley if desired. Serve with crusty bread for dipping and enjoy!

Notes

  • For a heartier stew, you can add additional vegetables such as celery, parsnips, or turnips.
  • If you prefer a spicier kick, use spicy Italian sausage or add a pinch of red pepper flakes.
  • You can make this stew in advance—it’s even better the next day after the flavors have had time to meld together.
