Description

  • 1 lb. ground breakfast sausage
  • 8 oz. cream cheese, softened
  • 1 cup sour cream
  • ½ cup milk
  • 1 tsp. salt
  • ½ tsp. pepper
  • ¼ tsp. onion powder
  • ¼ tsp. garlic powder
  • 6 eggs
  • 32 oz. frozen shredded hashbrowns
  • 1 cup shredded cheddar cheese
  • 2 green onions, diced

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, cook the breakfast sausage over medium heat until browned and fully cooked. Drain any excess grease.
  • In a mixing bowl, combine the cream cheese, sour cream, milk, salt, pepper, onion powder, and garlic powder. Mix until fully combined.
  • In a separate large bowl, beat the 6 eggs together. Add the cream cheese mixture and mix until well combined.
  • Add the cooked sausage, frozen shredded hashbrowns, shredded cheddar cheese, and diced green onions to the egg mixture. Stir everything until well combined.
  • Pour the mixture into a 9×13 inch baking dish and spread evenly.
  • Bake for 45-50 minutes or until the top is golden brown and the casserole is fully cooked. You can check by inserting a toothpick into the center, which should come out clean.
  • Let it cool for a few minutes before serving. Garnish with extra diced green onions if desired.

Notes

  • You can make this casserole ahead of time by assembling it the night before and refrigerating it overnight before baking.
  • For a spicier version, consider adding diced jalapeños or using spicy sausage.
