- 1/2 lb breakfast sausage
- 2 tablespoons all-purpose flour
- 1 cup whole milk
- 1/4 teaspoon black pepper
- Salt to taste
- 1 egg (for egg wash)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a skillet over medium heat, cook the sausage until browned and crumbled. Do not drain all the fat.
- Sprinkle flour over the sausage and cook, stirring, for 1–2 minutes.
- Slowly pour in milk while stirring constantly. Cook until the mixture thickens into a creamy gravy (about 3–5 minutes). Season with pepper and salt to taste. Let cool slightly.
- Roll out the puff pastry sheet on a lightly floured surface and cut into 2 equal rectangles.
- Spoon the sausage gravy onto one half of the pastry, leaving a 1/2-inch border around the edges.
- Top with the other puff pastry rectangle and press the edges together with a fork to seal.
- Beat the egg and brush over the top of the pastry for a golden finish.
- Place the puff pie on the prepared baking sheet and bake for 20–25 minutes, or until golden brown and puffed.
- Cool slightly before slicing and serving.

- You can add shredded cheddar cheese to the sausage gravy for an extra savory kick.
