A classic Southern-style sausage gravy made with savory breakfast sausage, creamy milk, and seasoned to perfection, perfect over biscuits.

- 1 pound breakfast sausage (pork or turkey)
- 1/4 cup all-purpose flour
- 2 1/2 cups whole milk
- Salt and black pepper, to taste
- Optional: pinch of crushed red pepper flakes
Instructions
- In a large skillet over medium heat, cook sausage, breaking it apart with a spatula, until browned and cooked through (about 8 minutes).
- Sprinkle flour over the cooked sausage and stir well to coat. Cook for 1-2 minutes to remove raw flour taste.
- Slowly pour in milk while stirring constantly to prevent lumps.
- Continue to cook and stir until gravy thickens, about 5-7 minutes.
- Season with salt, black pepper, and optional red pepper flakes to taste.
- Serve hot over warm biscuits or toast.
Notes
- Use whole milk for the creamiest texture, but 2% milk works as well.
- For a spicier gravy, add more black pepper or red pepper flakes.
- If gravy gets too thick, thin with a little extra milk.
- Can be made ahead and reheated gently on stovetop.
