- 400g spicy breakfast sausage (or your favorite sausage)
- 1 sheet puff pastry, thawed
- 1 egg, beaten (for egg wash)
- 1/2 tsp dried thyme or sage (optional)
- Mustard or ketchup for serving (optional)
Instructions
- Preheat oven to 200°C (400°F) and line a baking tray with parchment paper.
- Divide sausage into 8 equal portions and shape into small sausages or patties.
- Roll out puff pastry sheet and cut into 8 rectangles large enough to wrap each sausage.
- Place each sausage on a pastry rectangle, sprinkle with thyme or sage if using.
- Wrap the pastry around the sausage, sealing edges with a little beaten egg.
- Place wrapped sausages on the prepared baking tray.
- Brush the tops with beaten egg for a golden finish.
- Bake for 20-25 minutes or until pastry is golden and cooked through.
- Serve warm with mustard or ketchup if desired.
