- 1 lb breakfast sausage (mild or spicy, depending on your preference)
- 1 medium onion, diced
- 1 bell pepper, diced (optional)
- 1 (30 oz) bag frozen hash browns, thawed
- 2 cups shredded cheddar cheese
- 1 cup milk
- 8 large eggs
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp paprika (optional)
- 2 tbsp chopped fresh parsley (optional, for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish with non-stick spray or butter.
- In a large skillet, cook the sausage over medium heat, breaking it up into small pieces with a spatula. Once browned and cooked through, remove the sausage from the pan and set aside.
- In the same skillet, sauté the diced onion (and bell pepper, if using) until softened, about 5 minutes. Remove from heat.
- In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, black pepper, and paprika.
- Layer the thawed hash browns in the prepared baking dish. Top with the cooked sausage and sautéed onions and peppers. Pour the egg mixture evenly over the top. Sprinkle the shredded cheddar cheese on top of the casserole.
- Bake for 45-50 minutes, or until the eggs are set and the cheese is golden and bubbly.
- Let the casserole rest for 5 minutes before slicing and serving. Garnish with fresh parsley if desired.
Notes
- For a make-ahead option, you can assemble the casserole the night before, cover, and refrigerate. In the morning, just bake it as directed.
