Description

This hearty and flavorful Sausage Potato Soup combines savory Italian sausage, tender potatoes, and a creamy broth, creating a comforting dish perfect for chilly nights. Packed with flavor, it’s easy to make and can be adjusted for your spice preference with optional red pepper flakes.

Ingredients

Scale
  • 1 lb Italian sausage (mild or spicy, your choice!)
  • 4 cups potatoes (peeled and diced)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream (or half-and-half for a lighter option)
  • 2 cups kale or spinach, chopped
  • Salt and pepper, to taste
  • Optional: Red pepper flakes for a bit of heat

Instructions

  • Cook the Sausage:
In a large pot or Dutch oven, cook the Italian sausage over medium heat, breaking it apart as it cooks until browned and fully cooked. Drain any excess fat if needed.
  • Sauté the Onion and Garlic:
Add the diced onion and minced garlic to the pot with the sausage. Sauté for 3-4 minutes until the onion softens and the garlic becomes fragrant.
  • Add Potatoes and Chicken Broth:
Stir in the diced potatoes and chicken broth. Bring the mixture to a boil, then reduce the heat to a simmer. Let it cook for 15-20 minutes, or until the potatoes are tender.
  • Add Cream and Greens:
Stir in the heavy cream (or half-and-half for a lighter option) and chopped kale or spinach. Cook for another 5-7 minutes, or until the greens are wilted and the soup is heated through.
  • Season and Serve:
Season the soup with salt and pepper to taste. For extra heat, sprinkle in some red pepper flakes. Serve hot and enjoy!

Notes

  • Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • Adjust Heat: If you prefer a spicier soup, feel free to add more red pepper flakes or use spicy sausage.
  • Substitute Greens: If you don’t have kale, you can use spinach or any leafy green of your choice.
  • For a Lighter Version: Use half-and-half instead of heavy cream, or replace it with a plant-based cream if desired.
