- 1 1/2 cups self-rising flour
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp granulated garlic
- 1/2 tsp granulated onion
- 1/4 tsp paprika
- 1 1/2 cups grated Cheddar cheese
- 1 small grated carrot
- 1 small grated zucchini
- 1/4 cup sliced fresh chives
- 1 cup buttermilk
- 1 large whisked egg
- Other:
- 2 hot or mild Italian sausage casings (removed)
- Tomato chutney or tomato bacon jam for serving
Instructions
- Preheat oven: Preheat the oven to 400°F (200°C). Grease a standard muffin tin or line it with paper liners.
- Combine dry ingredients: In a large bowl, whisk together flour, salt, pepper, granulated garlic, granulated onion, and paprika.
- Add wet ingredients and vegetables: Add cheese, carrot, zucchini, chives, buttermilk, and egg to the dry ingredients. Stir until just combined.
- Divide batter: Divide the batter evenly among the prepared muffin tin.
- Add sausage: Divide sausage into six even pieces. Roll into smooth balls and place on top of the batter in each muffin cup.
- Bake: Bake until golden brown and a toothpick inserted in the center comes out clean, about 20 minutes.
- Serve: Remove from oven and cool slightly. Garnish with chives and serve with jam.
