Description

These savory Sausage Roll Muffins are the perfect blend of fluffy muffin batter and hearty sausage. Packed with cheese, vegetables, and a delightful blend of spices, they’re ideal for breakfast, brunch, or as a snack. Serve them warm with your favorite tomato chutney or jam for a delicious treat!

    • 1 1/2 cups self-rising flour
    • 1/2 tsp salt
    • 1/2 tsp black pepper
    • 1/2 tsp granulated garlic
    • 1/2 tsp granulated onion
    • 1/4 tsp paprika
    • 1 1/2 cups grated Cheddar cheese
    • 1 small grated carrot
    • 1 small grated zucchini
    • 1/4 cup sliced fresh chives
    • 1 cup buttermilk
    • 1 large whisked egg
  • Other:
    • 2 hot or mild Italian sausage casings (removed)
    • Tomato chutney or tomato bacon jam for serving

Instructions

  • Preheat oven: Preheat the oven to 400°F (200°C). Grease a standard muffin tin or line it with paper liners.
  • Combine dry ingredients: In a large bowl, whisk together flour, salt, pepper, granulated garlic, granulated onion, and paprika.
  • Add wet ingredients and vegetables: Add cheese, carrot, zucchini, chives, buttermilk, and egg to the dry ingredients. Stir until just combined.
  • Divide batter: Divide the batter evenly among the prepared muffin tin.
  • Add sausage: Divide sausage into six even pieces. Roll into smooth balls and place on top of the batter in each muffin cup.
  • Bake: Bake until golden brown and a toothpick inserted in the center comes out clean, about 20 minutes.
  • Serve: Remove from oven and cool slightly. Garnish with chives and serve with jam.

  • For a spicier kick, use hot Italian sausage.
