Description

This Savory Egg Roll Soup Delight brings the flavors of an egg roll into a comforting and flavorful soup! Packed with ground pork, cabbage, and a savory broth, it’s an easy, delicious twist on a classic favorite. Perfect for cozy nights or meal prepping!

Ingredients

Scale
  • 1 tablespoon sesame oil
  • 1 pound ground pork (or ground turkey)
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, minced
  • 4 cups low-sodium chicken broth (or vegetable broth)
  • 2 cups coleslaw mix (or shredded cabbage)
  • 1 large carrot, julienned or shredded
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon Chinese five-spice powder
  • 1/2 teaspoon crushed red pepper flakes (optional for a bit of heat)
  • Salt and black pepper, to taste
  • 2 green onions, sliced (for garnish)
  • 1 tablespoon fresh cilantro, chopped (optional, for garnish)

Instructions

  1. Cook the Pork: In a large pot, heat the sesame oil over medium-high heat. Add the ground pork and cook, breaking it apart with a spoon, until browned, about 5-7 minutes.
  2. Sauté the Aromatics: Add the chopped onion, garlic, and ginger to the pot. Sauté for 2-3 minutes until softened and fragrant.
  3. Add the Broth and Veggies: Pour in the chicken broth, followed by the coleslaw mix and shredded carrot. Stir to combine.
  4. Season the Soup: Stir in the soy sauce, rice vinegar, Chinese five-spice powder, crushed red pepper flakes (if using), and season with salt and pepper to taste. Bring the soup to a simmer and cook for 10-15 minutes, until the vegetables are tender and the flavors have melded together.
  5. Serve: Ladle the soup into bowls and garnish with sliced green onions and fresh cilantro, if desired. Serve immediately.

Notes

  • You can substitute the ground pork with ground chicken or turkey for a leaner option.
  • For extra richness, add a boiled egg on top, mimicking the egg roll experience.
  • If you prefer a thicker soup, you can stir in a tablespoon of cornstarch mixed with water towards the end of cooking to thicken the broth.
