A tangy and crunchy treat, these pickled green tomatoes are a perfect addition to any meal. Enjoy them as a side dish, on sandwiches, or as part of a charcuterie board.

- 12 medium green tomatoes, sliced into 1/4-inch thick rounds
- 1 cup white vinegar
- 1 cup water
- 1/2 cup sugar
- 2 tablespoons sea salt
- 1 tablespoon celery seed
- 1 tablespoon mustard seed
- 1/2 teaspoon red pepper flakes (optional)
Instructions
- Prepare the tomatoes by washing and slicing them.
- In a large pot, combine vinegar, water, sugar, salt, celery seed, mustard seed, and red pepper flakes. Bring to a boil over medium heat.
- Remove the pot from heat and pour the hot brine over the sliced tomatoes, stirring gently.
- Let the tomatoes cool completely in the brine.
- For longer storage, can the pickles or transfer to airtight containers.
- Refrigerate for at least 24 hours before serving.
Notes
- For a spicier pickle, increase the amount of jalapeños or add cayenne peppers.
- Other vegetables such as onions or bell peppers can be included.
