Description

A tangy and crunchy treat, these pickled green tomatoes are a perfect addition to any meal. Enjoy them as a side dish, on sandwiches, or as part of a charcuterie board.


Ingredients

  • 12 medium green tomatoes, sliced into 1/4-inch thick rounds
  • 1 cup white vinegar
  • 1 cup water
  • 1/2 cup sugar
  • 2 tablespoons sea salt
  • 1 tablespoon celery seed
  • 1 tablespoon mustard seed
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  • Prepare the tomatoes by washing and slicing them.
  • In a large pot, combine vinegar, water, sugar, salt, celery seed, mustard seed, and red pepper flakes. Bring to a boil over medium heat.
  • Remove the pot from heat and pour the hot brine over the sliced tomatoes, stirring gently.
  • Let the tomatoes cool completely in the brine.
  • For longer storage, can the pickles or transfer to airtight containers.
  • Refrigerate for at least 24 hours before serving.

Notes

  • For a spicier pickle, increase the amount of jalapeños or add cayenne peppers.
  • Other vegetables such as onions or bell peppers can be included.
