For the Pizza:

  • 1 pizza dough (store-bought or homemade)

  • 1 tablespoon olive oil

  • 1/2 pound breakfast sausage (crumbled)

  • 4 large eggs

  • Salt and pepper, to taste

  • 1/2 cup shredded mozzarella cheese

  • 1/2 cup shredded cheddar cheese

  • 1/4 cup grated Parmesan cheese (optional, for extra flavor)

For the Toppings (optional):

  • 1/4 cup green onions, sliced

  • 1/4 cup bell peppers, diced

  • 1/4 cup cooked bacon crumbles

  • Fresh parsley or basil, for garnish


Instructions

  1. Prepare the Pizza Dough:

    1. Preheat the oven to 400°F (200°C). If you’re using store-bought pizza dough, roll it out on a lightly floured surface to your desired thickness. Transfer it to a baking sheet or pizza stone lined with parchment paper or a silicone mat. If you’re using homemade dough, follow the recipe instructions to roll it out.

    2. Lightly brush the dough with olive oil and bake for about 5 minutes to give it a slight crisp before adding toppings.

    Cook the Breakfast Sausage:

    1. While the dough is baking, heat a skillet over medium heat. Add the crumbled breakfast sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.

    Make the Scrambled Eggs:

    1. In a bowl, whisk the eggs with a pinch of salt and pepper. Pour the eggs into a lightly greased skillet over medium-low heat.

    2. Gently scramble the eggs, stirring occasionally, until they are just cooked through but still soft and creamy (about 3-4 minutes). Remove from heat.

    Assemble the Pizza:

    1. Remove the partially baked pizza dough from the oven.

    2. Evenly spread the scrambled eggs over the dough.

    3. Sprinkle the cooked breakfast sausage on top of the eggs, then add the shredded mozzarella, cheddar, and Parmesan (if using) over the top.

    Bake the Pizza:

    1. Return the pizza to the oven and bake for an additional 8-10 minutes, or until the crust is golden and the cheese is melted and bubbly.

    Add Optional Toppings:

    1. After baking, top with sliced green onions, diced bell peppers, or crumbled bacon for extra flavor.

    2. Garnish with fresh parsley or basil before serving for a burst of freshness.
