Description

These Scotcheroo Truffles are a fun and indulgent twist on the classic Scotcheroo bars, combining the same delicious butterscotch, chocolate, and peanut butter flavors in a bite-sized treat. Perfect for a party, holiday treat, or just a sweet snack!

  • 1 cup powdered sugar
  • 2 Tbsp. butter
  • 1 1/2 cups Rice Krispies cereal
  • 1 cup semisweet chocolate chips
  • 1 cup butterscotch chips (+ 1/4 cup for drizzling, optional)

Instructions

  • Prepare the Peanut Butter Mixture: In a large mixing bowl, combine the creamy peanut butter, powdered sugar, and butter. Stir until smooth and well blended.
  • Add the Rice Krispies: Gently fold in the Rice Krispies cereal, ensuring they are evenly coated with the peanut butter mixture.
  • Form the Truffles: Roll the mixture into small balls, about 1-inch in diameter. Place them on a parchment-lined baking sheet.
  • Freeze: Freeze the truffle balls for at least 30 minutes to allow them to firm up.
  • Melt the Coatings: In separate bowls, melt the semisweet chocolate chips and butterscotch chips. You can do this in the microwave in 20-second intervals, stirring between each, until both are fully melted.
  • Dip the Truffles: Once the truffles are firm, dip each one into the melted butterscotch chips, followed by the melted chocolate chips, ensuring they are fully coated.
  • Drizzle (Optional): If desired, drizzle the remaining butterscotch chips over the top of the truffles for an added decorative touch.
