Description

Ingredients

  • 2 slices of bread (your choice of white, whole wheat, or sourdough)
  • 2 large eggs
  • 2 slices of cheese (cheddar, American, or your favorite cheese)
  • 2 tablespoons unsalted butter
  • Salt and pepper, to taste

 

  • Optional toppings: hot sauce, fresh herbs, avocado, or bacon

Instructions

  1. Make the scrambled eggs:

    • Crack the eggs into a bowl, then whisk them with a pinch of salt and pepper until fully combined.
    • Heat a nonstick skillet over medium-low heat and melt 1 tablespoon of butter.
    • Pour the eggs into the skillet, and allow them to set slightly. Then, gently stir the eggs with a spatula until they form soft curds. Remove from heat when they’re just slightly underdone (they’ll continue cooking once off the heat).
  2. Assemble the sandwich:

    • While the eggs cook, heat another skillet or griddle over medium heat.
    • Butter one side of each slice of bread with about 1 tablespoon of butter.
    • Place the cheese slices between the unbuttered sides of the bread.
  3. Grill the sandwich:

    • Once the skillet is hot, place the sandwiches in the pan, buttered side down. Grill for 2-3 minutes per side, or until the bread is golden and crispy and the cheese has melted.
  4. Add scrambled eggs:

    • When the sandwich is done, remove it from the skillet. Open it slightly to add the scrambled eggs, then close the sandwich.
  5. Serve:

    • Cut the sandwich in half and serve immediately with a side of pickles, chips, or your favorite dipping sauce.

Notes

  • For extra flavor, you can add a dash of hot sauce, sautéed vegetables, or crispy bacon to your scrambled eggs.
  • Use a variety of cheeses for a more complex flavor – sharp cheddar, mozzarella, or even a mix of cheeses work well!
  • If you like your eggs more cooked, scramble them a bit longer, but be careful not to overcook.
