Description

  • 1 tablespoon olive oil
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 1 celery stalk (diced)
  • 1 carrot (peeled and diced)
  • 1/4 cup dry white wine (optional)
  • 4 cups seafood stock or fish stock
  • 1 cup heavy cream
  • 1/2 cup tomato paste
  • 1 teaspoon Old Bay seasoning (or other seafood seasoning)
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 8 oz cod fillets (cut into bite-sized pieces)
  • 8 oz shrimp (peeled and deveined)
  • 8 oz scallops (sliced in half if large)
  • 1 tablespoon fresh parsley (chopped, for garnish)

Instructions

  1. Prepare the Vegetables:
    In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, celery, and carrot. Sauté for about 5-7 minutes until the vegetables are soft and fragrant.
  2. Deglaze with Wine (Optional):
    If using, pour in the white wine and scrape up any browned bits from the bottom of the pot. Let the wine simmer for 2-3 minutes until it’s reduced by half.
  3. Add the Liquids and Seasonings:
    Stir in the seafood stock, heavy cream, tomato paste, Old Bay seasoning, dried thyme, paprika, salt, and pepper. Bring the mixture to a simmer over medium heat. Let it cook for 10-15 minutes to allow the flavors to meld together.
  4. Cook the Seafood:
    Add the cod, shrimp, and scallops to the pot. Stir gently to combine. Continue cooking for about 5-7 minutes until the seafood is just cooked through and opaque. Be careful not to overcook the seafood, as it can become tough.
  5. Blend the Bisque (Optional):
    For a smoother texture, you can use an immersion blender to blend part of the bisque to your desired consistency. Alternatively, transfer about half of the soup to a blender, blend until smooth, and then return it to the pot. This step is optional but helps create a velvety, creamy texture.
  6. Adjust Seasoning:
    Taste the bisque and adjust the seasoning with more salt, pepper, or Old Bay seasoning if needed.
  7. Serve:
    Ladle the bisque into bowls and garnish with freshly chopped parsley.
  8. Enjoy:
    Serve your creamy seafood bisque warm, with crusty bread or crackers on the side for dipping!

Notes

  • If you prefer a spicier bisque, you can add a pinch of cayenne pepper or red pepper flakes.
  • For an even richer bisque, you can replace some of the seafood stock with clam juice.
