Description

A vibrant seafood pasta salad combining tender shrimp, lump crab meat, and colorful veggies tossed in a zesty lemon-herb dressing. Ideal as a light lunch or picnic dish.


Ingredients

  • 8 oz rotini or bowtie pasta
  • 1/2 lb cooked shrimp, peeled and deveined
  • 1/2 lb lump crab meat, picked over for shells
  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced cucumber
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 garlic clove, minced
  • Salt and black pepper, to taste

Instructions

  1. Cook pasta according to package instructions until al dente. Drain, rinse under cold water, and drain again.
  2. In a large bowl, whisk together olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper to make the dressing.
  3. Add cooked pasta, shrimp, crab meat, cherry tomatoes, cucumber, red onion, and parsley to the bowl.
  4. Toss everything gently to combine and coat with dressing.
  5. Refrigerate for at least 30 minutes to let flavors meld.
  6. Serve chilled or at room temperature.
