Description
A vibrant seafood pasta salad combining tender shrimp, lump crab meat, and colorful veggies tossed in a zesty lemon-herb dressing. Ideal as a light lunch or picnic dish.

- 8 oz rotini or bowtie pasta
- 1/2 lb cooked shrimp, peeled and deveined
- 1/2 lb lump crab meat, picked over for shells
- 1 cup cherry tomatoes, halved
- 1/2 cup diced cucumber
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh parsley
- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon Dijon mustard
- 1 garlic clove, minced
- Salt and black pepper, to taste
Instructions
- Cook pasta according to package instructions until al dente. Drain, rinse under cold water, and drain again.
- In a large bowl, whisk together olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper to make the dressing.
- Add cooked pasta, shrimp, crab meat, cherry tomatoes, cucumber, red onion, and parsley to the bowl.
- Toss everything gently to combine and coat with dressing.
- Refrigerate for at least 30 minutes to let flavors meld.
- Serve chilled or at room temperature.
Notes
- Use fresh seafood when possible for best flavor.
- Add diced avocado or bell peppers for extra texture.
- For a spicy kick, add a pinch of red pepper flakes.
