Description

Seafood Stuffed Shells are a decadent Italian-inspired dish filled with a creamy seafood mixture and baked to perfection. The combination of shrimp, scallops, and creamy ricotta cheese makes these stuffed shells an irresistible comfort food. Perfect for dinner parties or special occasions!

Ingredients

Scale

For the Shells:

  • 1215 large pasta shells
  • 1 lb cooked shrimp, peeled, deveined, and chopped
  • 1/2 lb scallops, chopped (or substitute with more shrimp)
  • 1 (8 oz) package ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1/4 cup fresh parsley, chopped
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste

For the Sauce:

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine (optional, can substitute with chicken broth)
  • 1 (14.5 oz) can crushed tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/4 cup heavy cream (optional for a creamy sauce)

Instructions

  1. Preheat the oven to 375°F (190°C). Cook the pasta shells according to the package instructions until al dente, then drain and set aside.
  2. In a large mixing bowl, combine the chopped shrimp, scallops, ricotta cheese, 1/2 cup mozzarella cheese, Parmesan cheese, egg, parsley, garlic powder, salt, and pepper. Mix until everything is well incorporated.
  3. Stuff each cooked shell with the seafood mixture and place them in a greased 9×13-inch baking dish.
  4. For the sauce, heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for 1-2 minutes, or until fragrant.
  5. Add the white wine (if using) and allow it to reduce for 2-3 minutes. Stir in the crushed tomatoes, basil, oregano, salt, and pepper. Let the sauce simmer for 10 minutes.
  6. If desired, stir in the heavy cream for a creamier sauce.
  7. Pour the sauce over the stuffed shells in the baking dish. Sprinkle the remaining mozzarella cheese on top.
  8. Cover the dish with aluminum foil and bake for 25-30 minutes. For a golden top, remove the foil and bake for an additional 5 minutes.
  9. Garnish with extra fresh parsley before serving. Enjoy!

Notes

  • You can substitute the scallops with more shrimp or use crab meat for a different flavor.
  • For added richness, you can sprinkle extra Parmesan cheese on top before baking.
