For the Shells:
- 12–15 large pasta shells
- 1 lb cooked shrimp, peeled, deveined, and chopped
- 1/2 lb scallops, chopped (or substitute with more shrimp)
- 1 (8 oz) package ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- 1/4 cup fresh parsley, chopped
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
For the Sauce:
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 cup dry white wine (optional, can substitute with chicken broth)
- 1 (14.5 oz) can crushed tomatoes
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1/4 cup heavy cream (optional for a creamy sauce)
Instructions
- Preheat the oven to 375°F (190°C). Cook the pasta shells according to the package instructions until al dente, then drain and set aside.
- In a large mixing bowl, combine the chopped shrimp, scallops, ricotta cheese, 1/2 cup mozzarella cheese, Parmesan cheese, egg, parsley, garlic powder, salt, and pepper. Mix until everything is well incorporated.
- Stuff each cooked shell with the seafood mixture and place them in a greased 9×13-inch baking dish.
- For the sauce, heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for 1-2 minutes, or until fragrant.
- Add the white wine (if using) and allow it to reduce for 2-3 minutes. Stir in the crushed tomatoes, basil, oregano, salt, and pepper. Let the sauce simmer for 10 minutes.
- If desired, stir in the heavy cream for a creamier sauce.
- Pour the sauce over the stuffed shells in the baking dish. Sprinkle the remaining mozzarella cheese on top.
- Cover the dish with aluminum foil and bake for 25-30 minutes. For a golden top, remove the foil and bake for an additional 5 minutes.
- Garnish with extra fresh parsley before serving. Enjoy!
Notes
- You can substitute the scallops with more shrimp or use crab meat for a different flavor.
- For added richness, you can sprinkle extra Parmesan cheese on top before baking.
