Instructions
- Prepare the crust:
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine the graham cracker crumbs, granulated sugar, melted butter, and salt. Stir until the mixture is well combined and resembles wet sand.
- Press the mixture into the bottom and up the sides of a 9-inch pie dish. Bake for 8-10 minutes or until the crust is golden and slightly firm. Allow the crust to cool completely before adding the filling.
- Make the filling:
- In a medium bowl, beat the softened cream cheese until smooth.
- In a separate bowl, whip the heavy whipping cream and powdered sugar until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until well combined.
- Add the peppermint extract (or mint syrup) and vanilla extract, and mix until smooth. If desired, add 1-2 drops of green food coloring to give the pie a festive, minty green color.
- Assemble the pie:
- Spoon the mint filling into the cooled graham cracker crust. Smooth the top with a spatula to make an even layer.
- Chill the pie in the refrigerator for at least 4 hours, or overnight if possible, to allow the filling to firm up.
- Add the topping:
- Once chilled, top the pie with whipped cream. You can pipe the whipped cream around the edges or spread it evenly across the top.
- For a fun touch, sprinkle chocolate shavings or mini chocolate chips on top, and garnish with a few mint leaves.
