Instructions

  1. Prepare the crust:
    • In a medium bowl, combine the Oreo cookie crumbs and melted butter. Stir until the crumbs are evenly coated with butter.
    • Press the mixture into the bottom of a 9×13-inch baking dish to form a crust. Use the back of a spoon to press it down firmly.
    • Place the dish in the fridge to set while you prepare the next layers (about 15 minutes).
  2. Make the mint filling:

    • Add the powdered sugar, vanilla extract, and peppermint extract, and continue to beat until fully combined and smooth.

  3. Assemble the layers:
    • Once the crust has set, spread the mint filling evenly over the crust layer in the 9×13-inch dish.

  4. Prepare the chocolate topping:
    • In a microwave-safe bowl, melt the chocolate chips with the heavy cream in 30-second intervals, stirring after each interval, until fully melted and smooth.
