Ingredients

Scale

For the Fajitas:

  • 1 lb chicken breasts (or steak, thinly sliced)
  • 2 bell peppers (red and green), thinly sliced
  • 1 large onion, thinly sliced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 lime (for juice)

For Serving:

  • 8 small flour tortillas (or corn tortillas)
  • Salsa, guacamole, sour cream (optional)

Instructions

  1. Preheat the Oven:
    • Preheat the oven to 400°F (200°C). Line a large sheet pan with parchment paper or a silicone baking mat for easy cleanup.
  2. Prepare the Fajita Ingredients:
    • Slice the chicken (or steak) into thin strips.
    • Slice the bell peppers and onion into thin strips as well.
    • In a large bowl, combine the olive oil, chili powder, cumin, garlic powder, smoked paprika, onion powder, salt, and black pepper. Mix until the spices are well combined.
  3. Toss the Ingredients:
    • Add the chicken (or steak), bell peppers, and onion to the bowl with the seasoning mixture. Toss everything together until the chicken and vegetables are evenly coated.
  4. Roast the Fajitas:
    • Spread the seasoned chicken and vegetables evenly on the prepared sheet pan.
    • Roast in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender, stirring halfway through.
  5. Finish the Fajitas:
    • Remove the sheet pan from the oven. Squeeze the juice of one lime over the cooked fajitas for an extra burst of flavor.
  6. Serve and Enjoy!
    • Serve the fajitas with warm tortillas, salsa, guacamole, and sour cream, if desired. Enjoy with your favorite toppings!

Notes

  • You can use beef, shrimp, or even tofu as a protein alternative for these fajitas.
  • For extra heat, add sliced jalapeños to the sheet pan before roasting.
  • If you prefer crispy edges on the vegetables, broil the fajitas for 2-3 minutes at the end of cooking.
