- 2 bell peppers, sliced (any color)
- 1 large onion, sliced
- 2 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp cayenne pepper (optional, for heat)
- Salt and pepper, to taste
- 1 tbsp lime juice
- 8 small flour tortillas (or corn, if preferred)
- Fresh cilantro, chopped (for garnish)
- Sour cream, salsa, or guacamole (optional, for serving)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine olive oil, chili powder, cumin, paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper. Toss the sliced steak, bell peppers, and onion in the seasoning mixture until evenly coated.
- Spread the seasoned steak and vegetables in a single layer on a sheet pan.
- Roast in the preheated oven for 20-25 minutes, or until the steak is cooked to your desired level of doneness and the vegetables are tender.
- Remove from the oven and drizzle with lime juice.
- Serve with warm tortillas and garnish with fresh cilantro. Add sour cream, salsa, or guacamole if desired.
Notes
- You can use chicken breast or shrimp instead of steak for a variation.
- For a spicier kick, add more cayenne pepper or fresh jalapeños to the mix.
