Instructions
- Thread the shrimp, avocado, and bell peppers onto skewers.
- In a large bowl, combine olive oil, lime juice, salt, and black pepper. Toss the skewers to coat and marinate for at least 30 minutes.
- In a small bowl, whisk together lime juice, olive oil, honey, salt, and black pepper for the dressing.
- Preheat the grill to medium-high heat. Grill the skewers for 5-7 minutes per side until shrimp is cooked through and vegetables are tender.
