Ingredients

  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces

  • 1 tablespoon lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Lime Dressing:

  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 1 teaspoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • Thread the shrimp, avocado, and bell peppers onto skewers.
  • In a large bowl, combine olive oil, lime juice, salt, and black pepper. Toss the skewers to coat and marinate for at least 30 minutes.
  • In a small bowl, whisk together lime juice, olive oil, honey, salt, and black pepper for the dressing.
  • Preheat the grill to medium-high heat. Grill the skewers for 5-7 minutes per side until shrimp is cooked through and vegetables are tender.
  • Drizzle the skewers with lime dressing and serve immediately.
