- Juice of 1 lime
- 1/4 cup fresh cilantro, chopped
For the Bowl:
- 1 cup black beans, drained and rinsed (canned or cooked)
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 avocado, sliced
- 1/2 red onion, thinly sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup crumbled queso fresco or shredded cheese (optional)
- Lime wedges (for serving)
For the Dressing (optional):
- 2 tbsp sour cream or Greek yogurt
- 1 tbsp mayonnaise
- 1 tbsp lime juice
- 1/2 tsp chili powder
- Salt and pepper, to taste
Instructions
- Cook the Rice:
In a medium saucepan, combine the rice, water (or vegetable broth), olive oil, and salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed. Once cooked, fluff with a fork, then stir in the lime juice and chopped cilantro. Set aside. - Prepare the Shrimp:
In a medium bowl, toss the shrimp with olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Heat a large skillet over medium-high heat and cook the shrimp for 2-3 minutes per side, until they are pink, opaque, and cooked through. Squeeze fresh lime juice over the shrimp after cooking. - Prepare the Dressing (optional):
In a small bowl, whisk together the sour cream (or Greek yogurt), mayonnaise, lime juice, chili powder, salt, and pepper. Adjust the consistency with a little water if needed. - Assemble the Bowls:
To assemble each bowl, start with a base of cilantro-lime rice. Add a scoop of black beans and corn. Top with grilled shrimp, avocado slices, cherry tomatoes, and red onion. - Top and Serve:
Optionally, sprinkle crumbled queso fresco or shredded cheese over the top. Drizzle with the optional dressing and serve with lime wedges on the side. - Serve:
