- 3 Persian cucumbers, chopped (about 1 cup)
- ½ cup chopped red onion
- ¼ cup minced fresh cilantro
- ½ teaspoon sea salt, plus more to taste
- ½ teaspoon sugar
- ¼ teaspoon cayenne pepper
- ¼ teaspoon garlic powder
- ¼ teaspoon cumin
- 1 medium avocado, pitted and diced
- Tortilla chips or plantain chips, for serving
Instructions
- Cook the Shrimp (for the cooked method):
Bring a large pot of water to a boil. Add the shrimp and cook until they turn opaque and pink, about 2-3 minutes. Immediately drain the shrimp and transfer them to a bowl of ice water to stop the cooking process. - Prepare the Shrimp:
Once the shrimp are cool, chop them into bite-sized pieces. - Combine Ingredients:
In a large bowl, combine the chopped shrimp, lime zest, ½ cup lime juice, chopped tomatoes, cucumbers, red onion, and cilantro. Stir gently to combine. - Season the Ceviche:
Add the sea salt, sugar, cayenne pepper, garlic powder, and cumin to the shrimp mixture. Stir well to ensure all the flavors are evenly distributed. - Chill the Ceviche:
Cover the bowl and chill the ceviche in the refrigerator for at least 30 minutes and up to 3 hours. This allows the flavors to meld together. Avoid chilling for too long, as the shrimp can become tough. - Add Avocado:
Just before serving, gently fold in the diced avocado. - Serve:
