Description

Shrimp & Crab Alfredo Lasagna Roll-Ups are individual pasta rolls filled with creamy seafood, rich Alfredo sauce, and melted cheese, then baked to perfection for an elegant and comforting meal.


Ingredients

  • 8 lasagna noodles
  • 1 tablespoon olive oil
  • 1/2 lb shrimp, peeled, deveined, and chopped
  • 1/2 lb lump crab meat (fresh or canned, drained)
  • 2 cloves garlic, minced
  • 1 1/2 cups ricotta cheese
  • 1 egg
  • 1/2 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese, divided
  • 2 cups Alfredo sauce (store-bought or homemade)
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C). Cook lasagna noodles according to package directions, then drain and lay flat on parchment or foil.
  2. In a skillet, heat olive oil over medium heat. Add garlic and shrimp. Cook for 2–3 minutes until shrimp are pink and cooked through. Remove from heat and cool slightly.
  3. In a large bowl, mix ricotta, egg, Parmesan, 1 cup mozzarella, shrimp, crab meat, parsley, salt, and pepper.
  4. Spread 1/3 of the Alfredo sauce in the bottom of a 9×13-inch baking dish.
  5. Spread 2–3 tablespoons of seafood filling across each lasagna noodle and roll up tightly.
  6. Place roll-ups seam-side down in the prepared baking dish.
  7. Top with remaining Alfredo sauce and sprinkle with remaining 1 cup mozzarella.
  8. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes, or until bubbly and golden on top.
  9. Let rest 5 minutes before serving. Garnish with extra parsley if desired.

Notes

  • Use jumbo shrimp and lump crab meat for the best texture.
  • For a lighter version, use part-skim ricotta and reduced-fat Alfredo.
  • Can be made a day ahead and refrigerated before baking.
