Description

This easy-to-make Shrimp Dip Log is perfect for any party, combining the fresh taste of shrimp with creamy cheese and a parsley coating. Serve it with your favorite crackers or veggies for a crowd-pleasing appetizer!

  • For the Shrimp Log:
    • 12 oz raw shrimp, deveined, tails-on
    • 3 tbsp seafood boil seasoning (or Old Bay seasoning)
    • 8 oz cream cheese, room temperature
    • 1 shallot, minced
    • 1 lemon, zested and sliced
    • 1/2 cup dried parsley
  • For Serving:
    • Crackers, veggies, mini toast, sesame sticks, pret

Instructions

  • Prepare the Lemon:
    • Zest the lemon and set the zest aside. Cut the remaining lemon into thick slices.
  • Poach the Shrimp:
    • Bring a large pot of water (about 8 cups) to a boil. Add the lemon slices and seafood boil seasoning to the water.
    • Add the shrimp to the pot, cover, and immediately remove from heat. Allow the shrimp to sit in the hot water for 5-6 minutes, until they turn fully pink and are no longer translucent.
  • Cool the Shrimp:
    • While the shrimp are cooking, prepare an ice bath by placing a tray of ice into a large bowl.
    • Once the shrimp are cooked, transfer them to the ice bath to cool. Remove the tails (if needed) and pat the shrimp dry.
  • Make the Shrimp Dip:
    • In a clean bowl, combine the room-temperature cream cheese, minced shrimp, minced shallot, and lemon zest. Mix until well combined.
  • Form the Log:
    • Place a large sheet of plastic wrap on the counter. Spoon the shrimp and cream cheese mixture onto the plastic wrap, forming a log shape. Wrap the plastic tightly around the log, smoothing out the shape as needed.
  • Chill:
    • Place the wrapped shrimp log in the refrigerator for 2 hours, or in the freezer for 45 minutes, to firm up.
  • Coat with Parsley:
    • Lay out a clean piece of plastic wrap or parchment paper and sprinkle it generously with dried parsley. Unwrap the chilled shrimp log and roll it in the parsley until fully coated.
  • Serve:
    • Transfer the parsley-coated shrimp log to a serving platter. Serve with crackers, veggies, or your choice of dipping items, along with a serving knife.
