Ingredients

  • 1 lb fresh shrimp, peeled and deveined
  • 1 package ravioli (store-bought or homemade)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tbsp butter
  • 2 cloves garlic, minced
  • 1/4 cup white wine (optional)
  • 1/4 cup Parmesan cheese, grated
  • 1/2 cup heavy cream
  • 1/2 cup chicken or vegetable broth
  • Fresh parsley for garnish

Instructions

  • Cook the ravioli: Bring a pot of salted water to a boil and cook the ravioli according to package instructions. Drain and set aside.
  • Sauté the shrimp: In a large skillet, heat olive oil over medium heat. Season the shrimp with salt and pepper, then cook for 2–3 minutes on each side, until pink and cooked through. Remove from the skillet and set aside.
  • Make the sauce: In the same skillet, melt butter over medium heat. Add minced garlic and sauté for about 1 minute, until fragrant. If using, pour in white wine and let it simmer until reduced by half.
  • Add cream and cheese: Stir in chicken broth and heavy cream. Let the mixture simmer for 5–7 minutes, until it thickens slightly. Stir in Parmesan cheese until melted and smooth.
  • Combine: Add cooked ravioli and shrimp back to the skillet. Toss gently to coat in the creamy sauce. Cook for an additional 2 minutes to meld flavors.
  • Serve: Garnish with fresh parsley and extra Parmesan. Serve warm.
