- 1 lb chicken breast or thighs, cut into bite-sized pieces
- 4 medium potatoes, peeled and sliced into thick wedges
- 3 carrots, peeled and sliced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 tbsp olive oil
- 1 tsp paprika
- 1 bay leaf
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Sear the Chicken: Heat olive oil in a large pot over medium heat. Add the chicken pieces and sear until browned on all sides, about 5-7 minutes. Remove and set aside.
- Sauté Vegetables: In the same pot, sauté the diced onion for 3-4 minutes until translucent. Add minced garlic and cook for another minute until fragrant.
- Add Vegetables and Broth: Stir in the potatoes, carrots, chicken broth, paprika, and bay leaf. Bring to a boil, then reduce to a simmer.
- Simmer: Return the seared chicken to the pot. Simmer the stew for about 25-30 minutes until the potatoes and carrots are tender and the chicken is cooked through.
- Season: Taste and season with salt and pepper. Remove the bay leaf before serving.
- Garnish and Serve: Garnish with fresh parsley and serve hot with crusty bread.
