- 2 cups packed brown sugar
- 1/2 cup heavy cream
- 1/4 cup corn syrup

Instructions
- Line an 8×8-inch square baking pan with parchment paper or lightly grease it.
- In a medium saucepan, melt the butter over medium heat.
- Add the brown sugar, heavy cream, and corn syrup to the pan. Stir until well combined.
- Bring the mixture to a boil, stirring constantly. Once it starts boiling, reduce the heat slightly but maintain a steady simmer. Continue stirring for about 5-6 minutes, or until the caramel reaches a soft-ball stage (about 235°F or 113°C on a candy thermometer).
- Remove the saucepan from the heat and stir in the vanilla extract and salt.
- Pour the hot caramel mixture into the prepared pan. Let it cool completely at room temperature.
- Once cooled and set, cut the caramels into squares or rectangles and wrap them in wax paper or parchment paper for easy storage and serving.
Notes
- For extra flavor, you can add a pinch of sea salt to the top of the caramels before they cool.
- Ensure the mixture is stirred constantly to avoid burning the caramel.
- If you prefer a firmer caramel, cook the mixture for a bit longer. For a chewier caramel, reduce the cook time slightly.
