Description

These six-minute caramels are a sweet, buttery treat that are quick and easy to make. With just a few simple ingredients, you can have chewy caramels ready in no time!


Ingredients

  • 1 cup unsalted butter
  • 2 cups packed brown sugar
  • 1/2 cup heavy cream
  • 1/4 cup corn syrup
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Line an 8×8-inch square baking pan with parchment paper or lightly grease it.
  2. In a medium saucepan, melt the butter over medium heat.
  3. Add the brown sugar, heavy cream, and corn syrup to the pan. Stir until well combined.
  4. Bring the mixture to a boil, stirring constantly. Once it starts boiling, reduce the heat slightly but maintain a steady simmer. Continue stirring for about 5-6 minutes, or until the caramel reaches a soft-ball stage (about 235°F or 113°C on a candy thermometer).
  5. Remove the saucepan from the heat and stir in the vanilla extract and salt.
  6. Pour the hot caramel mixture into the prepared pan. Let it cool completely at room temperature.
  7. Once cooled and set, cut the caramels into squares or rectangles and wrap them in wax paper or parchment paper for easy storage and serving.

Notes

  • For extra flavor, you can add a pinch of sea salt to the top of the caramels before they cool.
  • Ensure the mixture is stirred constantly to avoid burning the caramel.
  • If you prefer a firmer caramel, cook the mixture for a bit longer. For a chewier caramel, reduce the cook time slightly.
