Ingredients

  • 400g sea scallops (about 12 large scallops), patted dry
  • 1 tbsp olive oil
  • 1 tbsp butter
  • Salt and pepper to taste
  • For the lime cilantro sauce:
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp lime juice (freshly squeezed)
  • 1 tbsp olive oil
  • 1 small garlic clove, minced
  • 1/2 tsp honey
  • Pinch of salt

Instructions

  1. Prepare the lime cilantro sauce by blending or whisking together cilantro, lime juice, olive oil, garlic, honey, and salt until smooth. Set aside.
  2. Season scallops on both sides with salt and pepper.
  3. Heat olive oil and butter in a heavy skillet over high heat until just smoking.
  4. Place scallops in the skillet without crowding and sear for 1.5–2 minutes per side until golden brown and just opaque in the center.
  5. Remove scallops from heat and drizzle with the lime cilantro sauce.
  6. Serve immediately, optionally garnished with extra cilantro or lime wedges.

Notes

  • Make sure scallops are dry before searing for best browning.
  • Don’t overcook scallops — they should be just opaque and springy to the touch.
