- 400g sea scallops (about 12 large scallops), patted dry
- 1 tbsp olive oil
- 1 tbsp butter
- Salt and pepper to taste
- For the lime cilantro sauce:
- 1/4 cup fresh cilantro, chopped
- 2 tbsp lime juice (freshly squeezed)
- 1 tbsp olive oil
- 1 small garlic clove, minced
- 1/2 tsp honey
- Pinch of salt
Instructions
- Prepare the lime cilantro sauce by blending or whisking together cilantro, lime juice, olive oil, garlic, honey, and salt until smooth. Set aside.
- Season scallops on both sides with salt and pepper.
- Heat olive oil and butter in a heavy skillet over high heat until just smoking.
- Place scallops in the skillet without crowding and sear for 1.5–2 minutes per side until golden brown and just opaque in the center.
- Remove scallops from heat and drizzle with the lime cilantro sauce.
- Serve immediately, optionally garnished with extra cilantro or lime wedges.
Notes
- Make sure scallops are dry before searing for best browning.
- Don’t overcook scallops — they should be just opaque and springy to the touch.
- This dish pairs well with rice, quinoa, or a fresh salad.
