A Skillet Reuben is a delicious, easy-to-make twist on the classic Reuben sandwich. Featuring tender corned beef, melted Swiss cheese, tangy sauerkraut, and creamy Russian dressing, all cooked to perfection in a skillet for crispy, golden-brown bread. Perfect for a quick lunch or dinner!
Ingredients
- 2 slices rye bread
- 1/2 lb corned beef (thinly sliced)
- 2 slices Swiss cheese
- 1/4 cup sauerkraut, drained
- 2 tablespoons Russian dressing (or Thousand Island dressing)
- 1 tablespoon unsalted butter (for grilling)
- 1 teaspoon olive oil (optional, for extra crispiness)

Prepare the Sandwich:
Spread Russian dressing on one side of each slice of rye bread. Place a slice of Swiss cheese on one slice of bread. Add a generous amount of corned beef on top of the cheese. Layer the sauerkraut on top of the beef and then place the second slice of Swiss cheese on top of the sauerkraut. Top with the second slice of bread, dressing side down. -
Heat the Skillet:
Heat a large skillet or griddle over medium heat. Add the butter and olive oil (if using) to the skillet and allow it to melt and coat the pan. -
Grill the Reuben:
Place the prepared sandwich in the skillet. Grill the sandwich for about 4-5 minutes on each side, pressing it down gently with a spatula to ensure an even crisp. Flip the sandwich carefully once the first side is golden brown and the cheese starts to melt. Grill the second side until it is also golden and crispy, and the cheese is fully melted. -
Serve:
Once the sandwich is perfectly grilled, remove it from the skillet. Let it cool for a minute, then slice it in half and serve immediately.
Notes
- For a Tangier Flavor: If you prefer a bit more tang, add extra sauerkraut or a little bit of pickle relish to the sandwich.
