Description

Indulge in a delightful Slovenian Sweet Omelette, a fluffy and sweet treat that’s perfect for breakfast or dessert. Filled with cranberry jam and topped with fresh berries and whipped cream, this omelette is sure to impress family and friends.


Ingredients

  • For the Omelette:
    • 2 eggs
    • 30 g sugar
    • 40 g all-purpose flour
    • 1/4 tsp vanilla paste
    • 1 tbsp kirsch liqueur
    • 40 g cranberry jam
  • For the Topping:
    • 160 ml whipping cream
    • 20 g icing sugar
    • 200 g mixed fresh berries

Instructions

  • Preheat oven: Preheat oven to 200°C (400°F). Grease a 20 cm round springform cake pan.
  • Make cake batter: Separate egg yolks and whites. Whisk egg yolks with sugar and vanilla until fluffy. Whip egg whites until stiff peaks form. Fold half of egg whites into the egg yolk mixture. Add flour and stir. Gently fold in remaining egg whites.
  • Bake cake batter: Pour batter into prepared pan and spread evenly. Bake for 8 minutes. Remove from oven and remove from pan. Fold in half to form a taco shape. Cool for 3-5 minutes.
  • Decorate and serve: Whip whipping cream with icing sugar. Remove rolling pin from omelette. Brush with kirsch liqueur and spread cranberry jam. Decorate with berries and whipped cream. Dust with icing sugar.

Notes

  • Ensure that the egg whites are whipped to stiff peaks for a fluffy texture.
  • You can substitute the kirsch liqueur with any fruit liqueur or omit it for a non-alcoholic version.
