Description

This Slow Cooker Beef and Chorizo Casserole is a hearty, flavorful dish that’s perfect for a cozy dinner. Tender beef and spicy chorizo are slow-cooked to perfection with tomatoes, beans, and a variety of seasonings, creating a rich, comforting meal with just the right amount of heat.


Ingredients

  • 1 lb (450g) beef stew meat, cut into cubes
  • 1/2 lb (225g) chorizo, casing removed and crumbled
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) red kidney beans, drained and rinsed
  • 1 cup beef broth
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Brown the beef stew meat on all sides, about 5-7 minutes. Transfer to the slow cooker.
  2. In the same skillet, cook the chorizo over medium heat, breaking it up with a spoon until browned, about 5 minutes. Add to the slow cooker.
  3. Add the chopped onion and garlic to the slow cooker along with the diced tomatoes, red kidney beans, beef broth, cumin, smoked paprika, chili powder, salt, and pepper.
  4. Stir to combine all the ingredients, then cover and cook on low for 6-8 hours or until the beef is tender.
  5. Once cooked, adjust seasoning with salt and pepper if necessary. Serve hot, garnished with fresh cilantro.

Notes

  • For added richness, you can stir in a bit of sour cream or shredded cheese before serving.
  • Serve with crusty bread or over rice for a complete meal.
  • For more heat, add sliced jalapeños or a pinch of cayenne pepper to the casserole.
