  • 4 medium potatoes, peeled and diced
  • 4 carrots, peeled and sliced
  • 2 celery stalks, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup red wine (or additional beef broth)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 2 tablespoons tomato paste
  • 2 tablespoons cornstarch (optional, for thickening)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Ingredients:
    Place the beef stew meat, potatoes, carrots, celery, onion, and garlic in the slow cooker.
  2. Add the Liquids and Seasonings:
    Pour in the beef broth, red wine (or extra beef broth), Worcestershire sauce, and add the tomato paste. Sprinkle in the dried thyme, rosemary, salt, and pepper. Stir to combine all the ingredients.
  3. Cook the Stew:
    Cover the slow cooker and cook on low for 7–8 hours or on high for 4–5 hours, until the beef is tender and the vegetables are cooked through.
  4. Thicken the Stew (Optional):
    If you prefer a thicker stew, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir into the stew during the last 30 minutes of cooking. Stir well and let it cook for the remaining time.
  5. Serve:
    Once the stew is done, taste and adjust seasoning if needed. Ladle into bowls and garnish with freshly chopped parsley. Serve warm with crusty bread.

Notes

  • You can add other vegetables such as parsnips, turnips, or peas for additional flavor.
  • For a richer broth, you can add a bay leaf or two during cooking, just remember to remove them before serving.
