  • 1 ½ pounds chicken thighs, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 3 tablespoons all-purpose flour
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • ½ teaspoon salt, plus more to season
  • 6 cloves garlic, minced
  • 1 onion, diced
  • 3 carrots, peeled and sliced
  • 2 large potatoes, cut into ½-inch cubes (1 pound)
  • 3 cups chicken broth
  • 1 bay leaf
  • ½ cup milk
  • 1 cup frozen green peas

Instructions

  • Prep the Chicken:
    Season the chicken thighs with salt and pepper. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the chicken and cook until browned on all sides (about 5-7 minutes). No need to cook the chicken through; just get it nice and golden.
  • Mix Flour & Spices:
    In a small bowl, mix the flour, thyme, rosemary, and ½ teaspoon of salt. Sprinkle this mixture over the browned chicken and stir to coat evenly.
  • Slow Cooker Setup:
    Transfer the coated chicken to your slow cooker. Add the minced garlic, diced onion, sliced carrots, and cubed potatoes. Pour in the chicken broth and toss in the bay leaf.
  • Cook:
    Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and the vegetables are cooked through.
  • Finishing Touches:
    About 30 minutes before the cooking time ends, remove the bay leaf and stir in the ½ cup of milk and 1 cup of frozen peas. Continue cooking until the peas are heated through, about 20-30 minutes.
